This delicious darker-roasted coffee is a 50/50 blend of rotating washed Latin American coffees sourced through Caravela Coffee Importers. While the coffees in this blend change occasionally due to sourcing similar coffees from the freshest harvest, there’s always a consistent balance of sweet and nutty with a medium to heavy body.

We roast Dark Night to just after the start of the second crack giving this “dark” roast all the roasty toasty lovelies while maintaining sweetness.

Bad bag?

DISCLAIMER: I've only purchased two bags, both from Walmart (where I discovered Mad Priest), and both bags had stickers indicating the beans were roasted and packaged in January 2024.

The first bag I ground and brewed was amazing, and I immediately hid the rest of the bag from my husband so I could brew all of it for myself. The second bag, however, was nothing like the first. It was sour/bitter. I ground and brewed it exactly the same way, and then ground it a little bit finer and adjusted the brew time on my coffee maker to see if that would result in a better cup, but no luck.

SO I think my advice would be to buy these beans straight from Mad Priest and not Walmart!

Best coffee in TN

One of my favorite local roasts. Can't go wrong with anything from Mad Priest. Dark Night is very well balanced for a darker roast with some good fruity, chocolatey elements that I love.

Dark Night

I have tried this coffee using two different methods of brewing. The first was a standard pot (drip). This method was a great, well balanced full bodied roast with an easy finish. My preferred method was French Press. There is something about the course grind that made this a flavor explosion. Honestly it reminded much of a Guinness with a smooth finish. Will definitely be trying this again!
