Four decisions that cost us money and make the coffee better. We make them every time.
Mondays, Wednesdays, Thursdays, then shipped within a day or two. You are drinking it at its peak, not its expiration.
Most bags sat for months before you opened them.
Yemen, Haiti, Vietnam, Colombia. Small lots with real character, bought well above market so the grower stays in business.
Most bags are commodity lots, whoever was cheapest.
Every lot gets its own profile, built to bring out the fruit and sweetness already in the bean.
Dark roast is the cheapest way to cover a bad bean.
SCA certified graders cup every lot before it ships. If it is not excellent, it does not go in a bag.
Nobody is tasting the stuff on the grocery shelf.

Spousal unit buys the cheapest beans. After six days of undrinkable swill, I was beginning to plot against the spouse. Then the sloth-dispelling coffee arrived, and I heard angels sing.
Tastes like your average morning cup without the horrendous taste Folgers curses upon the tongue. Has kept me away from slothful, apathetic mornings without busting my heart. 10/10.
I am usually skeptical about ordering espresso beans because they are either charred to death or lower quality. These are a proper medium roast and the flavor is complex and floral. These will be my daily driver.
We tried this from a big box store and decided to buy direct. They source their beans NOT from one of the top 4 countries that most source from, so you experience a different flavor than typical. Will be a life-long fan.
I moved away from Chattanooga and there is nothing like this coffee anywhere that I have been. NOT ANYWHERE. I order it by the 5 lb bag by mail so I never run out.
I found this blessed brew at, of all places, a Walmart. But alas, as their supply ran dry, I sought the source from the Holiest and found the great Diocese of Coffee.
Here in South Georgia it can be difficult to find the flavors of puppy kisses and sunshine, but this package came at just the right time. The Dark Night of the Soul has brought light into my life.
Rich, deep, and full of character. The flavor is perfectly balanced with that bold, smooth finish I look for in a dark roast. It is strong without being bitter, and you can tell the quality is top-notch.
I have tried every single origin of the current lineup and all but 2 blends. My all time favorite was Peru, with Colombia Holy Grail a close second. None of them were bad, all great. I am Mad Priest for life.
I just want a nice, low-acid, flavorful cuppa. This coffee startled me with the first sip. Chocolate, some subtle spice, and so much more. I did something I rarely do, I drank this coffee black.
I trust Mad Priest to find ethically sourced beans and to treat the growers as true partners. That allows me to enjoy my cup without the bitter aftertaste of guilt.

This year marks ten years of brewing against the machine. It has not been a clean ten years. There were fires, mistakes, bad calls, and at least one auction bid that probably should have sunk us.
We have never pretended to have it figured out. We have just kept learning the craft, kept getting mad about injustice and crap coffee, and kept showing up for the people the industry writes off.
Ten years in, I am still tasting every lot and still finding things we can do better. That is the part I like most. There is always another origin, another question, another way to push this further.
Thanks for being here. Genuinely. Every bag keeps a small company doing it the harder, better way.
